About Restaurant Operations Management

The mandatory module “Restaurant Food and Beverage Management” (10 credits) introduces learners to the knowledge and managerial skills required to plan, organise and control a food and beverage operation, covering purchasing, stock control, staffing and quality management. Through case studies and practical exercises students examine current industry trends, sustainability issues and environmental considerations that shape modern restaurant practices.

The Diploma in Restaurant Operations Management is aimed at individuals with a Higher Certificate or relevant industry experience who wish to progress into supervisory or managerial roles in hotels, restaurants, bars, cruise ships and contract catering. Delivered part-time on the Donegal – Killybegs campus, the course combines theory with a compulsory work-based learning module, allowing students to apply academic concepts directly in their workplace and build a professional portfolio.
