This lab focuses on novel, local yeast strains, such as those with malic acid utilization, low temperature fermentation, and aromatic properties, making them valuable for imparting distinctive characteristics to Nova Scotian wines, and has recently been collaborating with local craft breweries and the Wine Association of Nova Scotia.
