This programme trains students to become certified cooks through a combination of classroom instruction and on-the-job experience. Students learn modern and classical cooking techniques for use in hotels, restaurants, institutions, and transportation settings. The programme leads to a Journeyperson Certificate and Red Seal endorsement. Graduates are qualified to work in the culinary industry across Canada.

Three years, 1,560 hours on-the-job training, one day per week on campus for 40 weeks each year, classroom instruction and practical training.

Graduates work as cooks in hotels, restaurants, institutions, transportation companies, catering services, and private enterprises.

ELA 30-2 and Math 30-3 and Physics 20 or Chem 20 or Science 20 and Related CTS courses, or ELA 10-2 and Math 10-3, or pass all five Canadian GED tests, or pass AIT entrance exam.

On-campus, full-time, three years.
