The Organisation of the United Nations for Agriculture and Food (FAO) defined in 2010 that the sustainable alimentation is the set of alimentary practices which aim to nourish humans in sufficient quality and quantity, today and tomorrow, respecting the environment, economically accessible and remunerative on the whole food chain.

This programme integrates the topic of alimentation from several perspectives, including the relationship between nutrition and health, nutrition and the environment, nutrition and culture, and nutrition and social aspects. It also considers the roles of different stakeholders in this context, such as producers, processors, distributors, consumers, and waste managers.

In addition to an analytical overview of sustainable alimentation, the course highlights original solutions. These solutions are based on individual or collective citizen actions and institutional efforts, such as laws and food policies, to promote best practices and sustainable initiatives.
