The qualification is delivered in a single semester and consists of two compulsory modules totalling ten credits. Teaching is fully online, with weekly lecture sessions of one hour followed by independent study, and assessment is through continuous-assessment assignments rather than a final exam. As a part-time programme it is suited to learners who are employed or volunteering in the food sector and need the flexibility to study alongside other commitments.

One of the core modules, Introduction to Surplus Food, examines the scale of food waste, links the EU Farm-to-Fork strategy to the United Nations Sustainable Development Goals and analyses circular-economy approaches to surplus management. The course provides participants with the knowledge to design ethical redistribution processes and to communicate effectively with stakeholders, preparing them for roles in food-aid organisations, charities or community volunteer groups.
