The bakery diploma, training future professionals and entrepreneurs in essential boulangerie technique: basic and mechanical kneading, the different French flours and the fermentations that develop a bread's aroma, and making and baking both basic and complex breads.

Practical classes, demonstrations and theory are taught in French and consecutively translated into English.
